Bird Nest Cupcakes Frost cupcakes. Top them with a circle of coconut (toasted to look twiggy) Put colored jellybeans in the center for eggs. Rice Krispie Bird Nests Make the Rice Krispie Treat mix (recipe on box.) Press mixture into buttered cupcake tins, to look like nests. Spread green frosting in the nests. Put a marshmallow chick in each nest, or candy eggs. Cheese Bunnies Mix: one package (about 5 oz) herb and garlic cheese spread one package cream cheese (3 oz)
Refrigerate 2 hours, or until firm. Then roll mixture into 24 balls (using about 2 teaspoons each) Add: ears (carrot sticks) eyes (pieces of raisin) noses (triangles of roasted red pepper) whiskers (chives) Place each bunny head on a cucumber slice or on a round cracker.
Easter Bunny Cake Bake cake in two round pans. One is the head. Cut ears from each side of the second. Remaining piece is the bowtie. Assemble, frost, and decorate. M&Ms make nice polka-dots for the bowtie, licorice makes whiskers picture Easter Bunny Cake #2 Bake cake in two 8" round pans. (Any kind of cake will do, but carrot cake is nice for a bunny!) You will use only one layer for the bunny. Cut one layer in half. Put halves together with frosting, and stand upright (cut side down) on a plate. Cut a notch about a third of the way up to form a head. The cut out piece is the tail- attach with a toothpick. (Or use a marshmallow for a tail) Frost with fluffy white frosting and sprinkle with coconut "fur." Use jellybeans for nose and eyes. Tint more coconut green, and place around bunny for grass.
